MEAL: Feel good chicken soup

I’ve been suffering from tonsillitis over the last couple of days so I figured that it was time to break out the big guns… Chicken soup. Now I’m not big on the usual chicken soup, that thick, creamy chicken soup is a big no no for me! So now every time I’m under the weather I make a pot of this and it never fails to make me feel a little better.

What you need:

1 teaspoon of vegetable bouillon
3 cups of cold water
3 mini chicken fillets
1/4 white onion
1 carrot
6 cherry tomatoes
Handful of spinach, torn into pieces
Ground pepper

Serves one

Obviously if you’re feeling unwell, cooking is the last thing you’ll want to do, which is why this recipe is so simple. Pop the cold water and bouillon in a saucepan, put it over a medium heat and start chopping the onion and carrot into small chunks. Add them into the saucepan and chop your chicken fillets into small slices, then add that too. Then add a little ground pepper and let it boil away, it will need a good 20-30 minutes so that the carrots soften and the chicken poaches properly. Once the carrots are nice and soft, tear the spinach into small pieces, pop them into the soup and stir in, the spinach only needs two minutes then it’s ready to eat.

This soup is so good becuase it’s packed full to the brim with vitamins. Carrots are converted into vitamin A when digested and vitamin A is a infection fighting vitamin so perfect when your immune system needs a boost. The spinach contain vitamins A and C, both great for your immune system and you can never have too much vitamin C! Chicken has also been linked to a boost in immunity so you really can’t go wrong with this soup!
