I love cookies as much as the next person! I threw an alcoholic tea party a few years ago (doesn’t every do that?) and a good friend of mine arrived with peanut butter cookies that only had three ingredients, they were gluten and dairy free! I’ve since adapted her recipe to make peanut butter and jam cookies and they go down a storm when I make them for the team at work.
What you need:
1 cup of peanut butter
1 cup of sugar
1/2 cup of strawberry jam
Preheat your oven to 180c. These are honestly the easiest things to cook ever! I’m not exaggerating, I’m not kidding, it’s so simple. Grab yourself a mixing bowl, put the egg, sugar and peanut butter in and give them a really good stir, you want to combine them well until it’s all smooth.
Get yourself two baking trays and cover them with grease proof paper. Then take a tablespoon of the cookie mixture, roll into a ball with your hands and pop it on the paper. Flatten it out a little bit and then make an indent in the centre with your finger, this is for the jammy centre!
When you have filled your trays with the cookies start spooning the jam into the middle of each cookie. Then into the oven! They only need about 10 minutes, so watch them like a hawk, they go from perfectly golden to burnt with in seconds!
