SALAD: Kale, spinach and goats cheese dream bowl

Salads don’t need to be boring, salad doesn’t mean soggy lettuce and a sorry tomato, here’s a perfect example of a salad that kicks arse.

You need:
1 handful of spinach
1 handful of kale
8 cherry tomatoes
A chunk of peeled cucumber
1/3 of a yellow pepper
2 radishes
A hunk of soft goats cheese

For the dressing:
1/4 cup of olive oil
3 tablespoons of balsamic vinegar
1 small clove of garlic (chopped)
1/4 red chilli (chopped)

Put all the dressing in a jar, give it a good shake and it’s ready. Chop all the veg and pop into a big bowl, mix with together with the dressing. Make sure all of the salad is covered and tip it into a bowl to serve and top with your goats cheese and some freshly ground pepper.

The dressing can be kept for a week or so in the jar in the fridge, it will just need a good shake before you use it each time.
